My mother always made this dish for me the night before the term started and it always makes me think of home, warmth and comfort. It is a slow-cooked beef casserole loaded with meat & carrots and finished with peanut butter, which gives it a rich flavour. Recently, it was described to me by some clients, as “the best stew I’ve ever eaten”. Praise indeed. Perfect for a post ski day to warm the cockles. Serve with jacket potatoes and braised red cabbage.
