A French peasant dish traditionally made with an elderly cockerel: we won’t subject you to the old cockadoodledoo, so instead we make this delicious winter warmer with boneless chicken thighs, mushrooms, carrots and button onions braised in local red wine and stock. Great served with mashed potatoes or even rice and roasted root veg.
